Thanks to this process, all the capsicum ― the substance that makes the habanero pepper hot ― is left behind, leaving the sweet fruitiness of the chili pepper. The peppers are macerated in pilsner malt and barley koji base, then used to create habanero vinegar. The latter gets distilled and blended into the spirit that is bottled at 54 proof.
