About Balcones True Blue 100 Proof Straight Corn Whisky

Balcones Baby Blue Corn Whisky isn't just the first whisky made in Texas since Prohibition, it's also the first and only blue corn whisky made anywhere in the world. Distilled twice and aged in five-gallon oak barrels, Baby Blue is a hand-crafted spirit made inside a hand-crafted distillery. Every square inch of Balcones Distilling, from the 235-gallon copper pot stills hammered by hand to the woodwork and copper plumbing, was made by the distillers at Balcones.

Balcones never uses chill filtering or caramel coloring in making Baby Blue Whisky. Instead, Balcones uses only fresh New Mexican blue corn, ferments its own wash and distills the product from start to finish, going so far as to number each bottle by hand. "We're trying to do something that's novel," he says. "More importantly, we're trying to do something that's authentic.” Balcones Blue 100 proof is made from roasted Hopi blue corn. True Blue 100 is made from the same select barrels of their blue corn whisky brought down to 100 proof.

True Blue 100 is inspired by the bottled-in-bond tradition. 100% of the whisky in this bottle was born, raised, and bottled at Balcones--from mash to glass. More approachable than full cask-strength whisky, True Blue 100 retains the depth and complexity of over-proof spirits with the softer edges.

About Balcones

Situated in Texas where the extreme and rapid temperature swings make the barrels "breathe" much faster, Balcones Distilling started as a passion project in an old Texas weldin shop in 2009. Today, this is one of the most unique, grain to glass craft distilleries out there. Using only the best of ingredients from blue corn grown in New Mexico to the first malted barley grown in Texas and handmade Scottish Forsyths copper-pot stills, Balcones pays special attention to the barrels. They consider oak to be an ingredient in whisky as well and their barrels are all customized. Balcones whisky is aged in several barrel types for a more complex flavor profile. Besides Balcones whisky which is adored for its bold and intense flavors, they also make rum.

About American Whiskey

There are two main representatives of the American whiskey family, bourbon, and rye, but some other spirits don't fall into those two strictly regulated categories.


There's equally strictly regulated American single malt, made from 100% malted barley, Tennessee whiskey, essentially bourbon filtered through maple charcoal and aged in new charred oak barrels.


And then there's moonshine, a high proof (150- 170 proof) distilled spirit mainly made out of corn which gained popularity during the prohibition.

Ripe apricots & mango with cinnamon, singed sugar on top of cocoa and dried chillies on the nose. On the palate are notes of deep oak and char, black tea and salty baking chocolate, old leather, roasted corn and coffee. The finish is lingering with dried cherries & blackberries followed by toasty bitter chocolate with pleasant oak tannins.
