About Wilderness Trail Kentucky Straight Wheated Bourbon Whiskey

Wilderness Trail Wheated Bourbon is a Kentucky Straight Bourbon Whiskey that is small-batch and crafted with the utmost precision and care. The team at Wilderness Trail takes their "small batch" label seriously, at just 20 barrels per batch, the result of a single fermenter. Their bourbon is matured in premium Cooper select barrels with 18-month-old air-dried staves that give it a flavor profile that's second to none. Distilled, aged, and bottled in the heart of Danville, Kentucky, this bourbon boasts a mash bill of 64% corn, 24% wheat, and 12% malted barley, making it one of the highest wheat-to-corn ratios for a Kentucky Bourbon. Wilderness Trail Wheated Bourbon adheres to the rigorous standards of “Bottled in Bond,” and uses their own unique yeast strains. Entering the barrel at a low 110 entry proof and aged for four years in a #4 charred barrel ensures a rich, non-chill filtered experience that's bursting with sweet vanilla and charred oak. The finish is long and sweet with notes of oak spices, toffee, and dark fruits — perfect for savoring neat or on the rocks.

About Wilderness Trail

Wilderness Trail Distillery is a craft operation that was launched in 2012 in Danville, Kentucky. Mixing old traditions with modern science, After over 20 years of working with distilleries worldwide to provide advice and fermenting products, founders Shane Baker and Dr. Pat Heist launched their premium craft distillery in 2012, with the core focus of making the highest quality Bourbon and Rye Whiskey.

Their production methods include an Infusion Mashing Process, which ― together with their unique yeast strains ― results in a softer and uniquely flavorful distillate. They are the first Kentucky bourbon distillery to use a chemical-free clean steam boiler that minimizes off flavors. Instead of sour mash, they rely on a sweet mash, which enables more flavors to be extracted from the grains. They employ a hybrid pot still, as well as two continuous column stills. All the whiskey is distilled, aged, and bottled on-site.
