About Vermont Spirits No. 14 Bourbon
Each fall, the maple trees native to the hardwood forests of New England begin stockpiling starch and sugar in order to survive the short days and freezing nights of New England's harsh winter. Once the temperatures warm, the maple trees convert the stored sugars into sap, which they release in the spring.
A New England native, Vermont Spirits' Master Distiller Harry Gorman collects the early runs of the sap from Vermont's maple trees each spring. The early run of the sap, which is lighter in color than traditional maple sap, has a more delicate and subtle flavor profile. "A very small percentage of the sugar maple's sap output comes in the form of early run sap," says Gorman. "Early run sap is the cream off the top of an altogether wonderfully delicious sugar."
Vermont Spirits' No. 14 Bourbon is crafted from a unique blend of two American traditions: bourbon whiskey and maple syrup. The bourbon whiskey itself is aged for a minimum of five years, which gives it notes of honeyed oak and woody spices, with touches of vanilla and caramel littered throughout. By blending it with maple syrup crafted from the sap that Gorman collects, however, the master distiller is able to impart a slightly sweeter flavor profile to the bourbon, and give it a chewier mouthfeel.
No. 14 Bourbon, which is named honor of Vermont (Vermont was the 14th state admitted to the Union), has a semi-sweet and rich aroma, with hints of caramel, nougat and maple syrup. The flavor is well-balanced, with sweet notes of maple, honey and dates mingled together with touches of oaky spices and cloves, and leads to a soft and elegant finish.
