With the help of indigenous Zapotec Mexican Indian producers from the remote villages of Oaxaca, Del Maguey uses ancient, original organic processes, and the varying micro-climates and terroir gives each expression a unique, rich, sweet and smoky character. Every product is made by individual family palenqueros (producers) in old-style villages.

Details: Crafted from 7 to 8-year old agave Espadín, roasted with Mezquite, Quebrachi, and Huamuchil wood for 3-8 days. Crushed using a horse drawn tahona. open-vat fermentation. Distilled in a copper pot still.
