About Montelobos Ensamble Mezcal

Mezcal is a unique spirit with 5 centuries of rich history and tradition behind it. Montelobos Mezcal honors those traditions with a lineup of artisanal spirits celebrating terroir. Maestro Mezcalero Aarón Alva crafts their Mezcal Ensamble at Palenque del Tentzo, San Nicolás Huajuapan, Puebla. It starts with papalote, espadin, and tobalá agaves which are free of pesticides and herbicides. The piñas (hearts) of the agaves are harvested by the jimadores with machetes and roasted in underground volcanic stone pits, which takes between 5 and 7 days. After the cooked agaves are cut and shredded, the juice is left to ferment in open-air pine vats, which takes between 7 and 10 days. Then, the liquid is double-distilled in copper stills. The resulting spirit is complex with contrasting aromas and flavors of caper, nutmeg, pink pepper, cooked agave, citrus, and smoke. The expression is bottled at 90.6 proof.

About Montelobos Mezcal

Montelobos was founded in 2011 by Iván Saldaña, a molecular plant biologist and distiller who used to work with two mezcal-producing families in Oaxaca and Puebla, Mexico. Partnered with Mezcalero Don Abel Lopez, they produce mezcal the artisanal way, abiding tradition and with sustainability in mind. They only use cultivated agaves that are grown organically, without any pesticides or herbicides. They also compost most of their waste and have improved the design of their palenque to minimize environmental impact. About Mezcal

Mezcal is a distilled spirit made from roasted agave plants between two days and two weeks, which gives it a distinct smokey flavor.
What scotch is for whisk(e)y, mezcal is for tequila.


It can be made from different types of agave in different parts of Mexico, but most of it (60%) comes from the state of Oaxaca. Mezcal offers a large diversity of flavor profiles and ranges between 40 and 55% ABV.
