About Barrell Cask Strength Straight Bourbon Whiskey Batch #006

Though all bourbons are made from the same basic ingredients, it's the choices the master distiller makes that shapes his creation."
Barrell Bourbon Batch #006 is made from a mash of 76% corn, 20% rye and 4% malted barley. After the grains are sourced, they are mashed and fermented before being distilled in Tennessee through a copper still. The bourbon is then matured for eight years months in charred, white American oak barrels. The intense southern heat causes the wooden barrel staves to expand and contract, interacting with the whiskey and contributing notes of saddle leather, burning tobacco and barbeque as it matures.
Once the bourbon has matured, it is bottled at cask strength (122.9 proof) without the use of chill-filtration (chill filtration removes the cloudiness that is natural to bourbon, but also removes the fatty acids and esters which contribute to the whiskey's overall flavor and complexity). As a result, the bourbon has a reddish amber color, along with an aroma of vanilla syrup, smoked figs, pears and caraway seeds. The aroma gives way to notes of peaches and pralines, and leads to a finish highlighted by tobacco, corn pudding and sweet maple syrup.
Barrell Straight Bourbon Whiskey earned a score of 95 points at the Ultimate Spirits Challenge in 2015 and earned a Double Gold at the San Francisco World Spirits Competition that same year.
