    Situated over 1,000 feet above sea level in southwestern Guatemala, the Ron Zacapa Plantation enjoys generous amount of sunlight and mineral-rich, volcanic soils, making it ideal for the cultivation of fresh, raw sugar cane. There, expert farmers — many of whom have been tending to the land for decades — carefully analyze the sugar cane as it matures on the estate, harvesting only the canes that contain high levels of sucrose and fiber and low levels of impurities.

    While most rums are made using molasses, which is a byproduct of refining sugar cane, Ron Zacapa Rum is made using virgin sugar cane honey. The virgin sugar cane honey is extracted from the first pressing of raw sugar cane harvested on the Zacapa Plantation, and lends a luxurious, smooth texture to the rum. Once the honey has been extracted, it is fermented with a unique strain of pineapple yeast before being distilled through a single column still lined with copper.

    Following distillation, Ron Zacapa XO Solera Gran Reserva Especial is solera-aged through a series of casks that were previously used to mature bourbon, sherry and Pedro Ximenez wine. Solera aging is a process that has generally been reserved for aging cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As rum from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of rum from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new rum. As a result, no cask in the solera is ever fully emptied. In addition, as the younger rum cascades through the solera, its average age and complexity gradually increases over time.

    Ron Zacapa XO is crafted from a marriage of rums that have been solera-aged and are up to twenty-five years old. In addition, the rum is finished in French oak barrels that were previously used to mature cognac. As a result, the rum has an intense mahogany color, along with an aroma of leather, burnt caramel, roasted nuts and orange zest. The aroma gives way to notes of tobacco, cherries, chocolate, dates and figs on the palate, and leads to a long, semi-sweet finish accented by notes of raisins, vanilla and cinnamon.

    The Bacardi family is the lifeblood of Bacardi Rum. They first began producing Rum in Cuba in 1862. The subsequent years that followed brought a revolution to wild Havana nights during the American Prohibition. Emilio Bacardí Moreau refused to support the Spanish government, fighting staunchly for the independence of Cuba, and was consequently exiled for his beliefs. When he later returned to Cuba, he became the first freely-elected mayor of Santiago de Cuba. Cuba in the 1960s was undergoing a revolution, which eventually led to the Bacardi family’s exodus out of Cuba. The members of the family moved to the United States and shifted their distillery to the beautiful island of Puerto Rico.

    The history of Bodegas Williams & Humbert goes back to 1877, when Sir Alexander Williams, a great admirer and connoisseur of sherry products, and Arthur Humbert, a specialist in international relations, founded a winery. Since then part of the original wines and brandies has been preserved in high quality oak casks, and now serves as the base of the development and ageing of every sherry and brandy produced at Bodegas Williams & Humbert. The company is now fully owned by the Medina family. The Medina family entered the industry in the 1960s, when José, Nicolás, Jesús and Ángel, who were working at different Jerez wineries at the time, decided to open their own winery: José Medina y Compañía. In the process of acquiring different brands to strengthen and diversify its capacities, José Medina y Compañía bought the international group Williams & Humbert, which now lends its name to the entire family business.

    Two generations of the family currently work at the company.     Today, the fourth and fifth generations of Brugal's direct descendants continue to honor the memory of their ancestors by acting as personal guardians of the entire rum-making process at Brugal & Co. Brugal 1888 Rum pays homage to the year that Andrés Brugal moved to the Dominican Republic and brought the craft of making exquisite rum to the country.

    Brugal 1888 Rum is made from fresh, raw sugar cane, which is hand-cut from plantations across the Dominican Republic's countryside. Once the cane has been harvested, it is pressed and the remaining juice is turned into molasses. The molasses is then fermented for approximately 48 hours before it is twice distilled through Brugals' copper stills.

    Following distillation, the rum is first matured in American oak casks before being double-barreled, or finished, in Spanish oak casks (each cask used in the maturation process is hand-selected by George Espie, Edrington's Master of Wood, and is the same type used to mature the world's best single malt Scotch whisky). "The big challenge was using a different kind of wood," said Juan Campos, Brugal's brand ambassador in the United States, when discussing how Brugal is differentiated from other rums. The Spanish oak casks contribute notes of dark cherries, blackberries and dried fruits, and complement the notes of cinnamon, sugar cane and candied oranges inherent in the rum. "We call it the son of the marriage," Campos says of the rum. "It combines the heritage and knowledge of making rum with knowledge of the wood."

    The history of Ron del Barrilito begins in 1787 when the Fernández family received a hacienda in Puerto Rico from the Spanish Crown. It was in 1871 that Pedro Fernández returned to Hacienda Santa Ana from France, where he learned about crafting spirits. It would take him nearly a decade to perfect the craft and came up with the process and recipe for Ron del Barrilito or "little barrel rum", thus named for the small barrels that the Hacienda would pour the rum from when serving guests. The recipe remained unchanged for several decades with a younger rum being added after Prohibition ― an expression that was more suited for cocktails.
