About Fluxuate Whiskey
Started by two college friends, Tim Obert and Clint Potter, who — several years after their graduation — were reunited by their love for craft brewing, Seven Still Distillery is an ambitious project that aims to create a unique whiskey for each of the famous “Seven Hills” in San Francisco. Taking a novel approach, Obert and Potter distill their whiskies from bottle-ready craft beers, resulting in flavors that truly demonstrate the quality of the ingredients and production, from start-to-finish.
"Not a lot of people know the connection between brewing and distilling," Obert says. "When you're making whiskey you're basically starting with a really low-quality beer. And we want to play off of that connection with our brand, using different beer styles as the basis for our whiskeys."
Fluxuate Whiskey is the second whiskey in the Seven Hills series, and pays homage to San Francisco’s Rincon Hill. This unique whiskey, of which only 59 cases were released in California, is distilled from a coffee porter made with Flux Cold Brewed Coffee, a very popular brand in of coffee brewed in Berkeley, California. As a result, the whiskey has a robust coffee aroma, followed by vanilla beans, dark chocolate and light citrus flavors on the palate. The finish is malty and sweet, with the silky coffee flavors shining through.

About American Whiskey
There are two main representatives of the American whiskey family, bourbon, and rye, but some other spirits don't fall into those two strictly regulated categories.
There's equally strictly regulated American single malt, made from 100% malted barley, Tennessee whiskey, essentially bourbon filtered through maple charcoal and aged in new charred oak barrels.
And then there's moonshine, a high proof (150- 170 proof) distilled spirit mainly made out of corn which gained popularity during the prohibition.
