About Cirka

Co-founded in 2014 by Master Distiller Paul Cirka, Circa Distilleries' goal is to craft Canadian whisky. As is often the case with younger craft distilleries, Cirka has been making several clear spirits while waiting for the whisky to mature. The artisanal distillery is located in Montreal, where they employ sustainable practices, relying on local suppliers. This means that local grains, botanicals, and pure water are used in the production process.

Cirka is the first grain-to-bottle distillery in Quebec as well as one of the first of its kind in Canada. Their whisky has seen 3 small-batch releases thus far: the Premier Whisky, Whisky No2, and Whisky No3. The clear spirits include the Gin Sauvage, Gin375 Digestif, and Gin Navy Strength, along with Vodka Terroir and Chili Vodka. These expressions have garnered several of the most prestigious international awards since the company's inception in 2014.

About Gin

According to Winston Churchill, "The gin and tonic has saved more Englishmen's lives and minds than all the doctors in the Empire," referring to the British officers using it to treat malaria in India.

Initially made for medicinal purposes, gin gets most of its flavor from the juniper berries added after the distillation process. It sure has come a long way from the Middle Ages, with the introduction of new botanicals, fruits, and spices, bringing it closer to people of all flavor varieties.

Tasting Notes

The nose is bright with citrusy, floral, and spice aromas, along with lemongrass and elderflower. The palate is equally citrusy with hints of spice and floral notes. You'll find additional notes of star anise and oak.
