About St. Augustine Florida Straight Bourbon Whiskey
St. Augustine Distillery, established in 2013, is a locally owned and operated artisanal spirits distillery, located in the state's oldest and now fully restored 1917 St. Augustine Ice Plant. It was founded by 20 local families with one common goal: To build a sustainable business that would flourish at the intersection of economic growth and social good. This is reflected in how they make their spirits and in their sustainable practices and projects, as well as in their giving back to the community by supporting various local initiatives and reinvesting in St. Augustine to improve the lives and well-being of current and future generations. Their experienced distillers are on a mission of creating the finest spirits using fresh, locally-grown ingredients.
All of their spirits, which include handcrafted, award-winning bourbon, rum, gin, and vodka, are made from local and regionally sourced ingredients. The distillery prides itself on distilling and bottling everything they sell, and do not purchase and re-barrel or bottle other companies’ bourbon. This allows them to make sure that the spirits are just right before barreling and aging.
Florida Straight Bourbon is made from a mash bill of 60% Florida corn, 22% barley, and 18% Florida wheat. The grains are milled and mashed onsite, and fermented with proprietary yeast strains in closed-top fermenters. After distillation, the spirit is aged for a minimum of three years in new, 53-gallon oak barrels, which have been toasted and charred to the distillery’s custom specifications. Their distillers sample the spirit periodically, tracking and grading each barrel through its life cycle, and select the barrels to harvest. These barrels are married in small batches of 16 – 40 barrels, taking into account each barrel’s location and height in the warehouse, which ensures a consistent flavor profile. Their Florida interpretation of America’s spirit is then hand bottled at 88 proof, without chill filtration.
