About Proof & Wood Idle Hands 5 Year Old Bourbon Whiskey

Based in Connecticut, Proof and Wood Ventures Inc. is a spirits company that buys, sells, ages, and bottles primarily American whiskey. More recently, they have added a rum as well as other spirits to their lineup, including a Dutch genever. Founded by Dave Schmier, the company develops brands, sourcing high-quality spirits from across the globe, as well as aging their own. Their range includes all manners of spirits that range from cocktail-friendly to super-premium collectors' editions. The name takes its inspiration from 2 of the most important things a blender and bottler must take into account: the proof a spirit is bottled at and the wood of the barrel it was aged in.

Idle Hands Bourbon came to be as a collaboration with the now-defunct NY whiskey bar of the same name. It is a small-batch bourbon with a high-rye mash bill of 60% corn, 36% rye, and 4% malted barley that has spent at least 5 years in new American oak. Distilled in 2015 in Indiana, it has seen 2 batches thus far, each consisting of 13 barrels. Bottled at 95.2 proof, it's rich with caramel, vanilla, fruit, baking spice, and oak notes.

Tasting Notes

The nose opens with brown sugar, vanilla, baking spice, toasted oak, citrus zest, and hints of dried fruit. On the palate, you'll find more caramel and vanilla with orchard fruit, cinnamon, clove, licorice, oak, and raisin notes.
