About Koval Single Barrel Amurana Barrel Finished Rye Whiskey

Founded in Chicago in 2008 ― the first distillery to open its doors within Chicago’s city limits since Prohibition ― Koval has been crafting certified organic whiskeys, brandies, liqueurs, and specialty spirits from scratch. Released in 2022, Koval Single Barrel Amburana was distilled from 100% rye. The exclusive and rare expression was finished in Brazilian amburana barrels, making for a well-balanced and smooth expression that's 100% organic to boot. Grain-forward, spicy, and sweet, the single-barrel whiskey has notes of vanilla, cardamom, coconut, and cinnamon. It's bottled at 100 proof.

About Koval

"Being a craft distiller allows us to be flexible and bring a new approach to the market," says Sonat Birnecker, the founder of Koval Distillery. "Craft can be different. Different in business model. Different in product. Craft is a way to be creative." Together with her husband, Robert, Birnecker founded Koval Distillery — Chicago's first distillery since Prohibition — in 2008.

Koval Distillery, which is situated just a few feet away from Hollywood Beach in Chicago's North End, is dominated by a custom-made, 2,000 gallon, Kothe Destillationstechnik copper-pot still imported from Germany. "I come from a family that's been distilling for over a hundred years in Austria,"explains Robert, who has been distilling spirits himself since he was a child. "My grandfather had a distillery in Austria and I would help him to make different eau de vies and brandies when I was growing up. He taught me the importance of having the right equipment and using fresh, organic ingredients."

About Rye

As American as the bald eagle, rye whiskey was first brewed in the American Northeast in the 1600s. Even George Washington distilled it after leaving the Oval Office, so there’s no way of denying its origin.
It’s distinguished from bourbon for its original and unique spicy notes.

By law, rye whiskey must be made from at least 51% rye grain, aged in new and charred oak barrels for at least two years, and bottled at no more than 62,5% ABV.

Tasting Notes

The nose is grain-forward and gently sweet with vanilla and rye spice. Look for grain, spice, vanilla, cardamom, coconut, and cinnamon on the smooth and well-balanced palate that leads to a satisfyingly long finish.
