This expression is the first Holmes Cay rum to come from the Long Pond Distillery. Distilled in 2007 from 100% molasses, the light ester ITP (Ive Trelawny Pot) rum was aged in Jamaica for 15 years before being bottled in New York State at 112 proof.

About Holmes Cay Jamaica ITP 2007 Single Cask Rum

Founded in 2019 by rum aficionado Eric Kaye, Holmes Cay is an independent bottling company from New York City. Passionately standing behind the tradition and honor that is an integral part of rum, Kaye brings incredible as-of-yet-unknown unadulterated cask-strength rums to the US, introducing spirit lovers to the best-kept secrets of the rum world. Holmes Cay Jamaica ITP 2007 is a single cask rum from the fall 2022 collection of limited edition cask strength rums. It was distilled at Long Pond Distillery in 2007 from 100% molasses. The ITP (Ive Trelawny Pot) rum is a light ester style that was distilled on a historic John Dore copper pot still before being aged in Jamaica for a whopping 15 years in ex-bourbon casks. It's the first Holmes Cay rum to come from Long Pond Distillery. The rich and flavorful expression with notes of banana, mango, brown sugar, oak, and tobacco was bottled at 112 proof without chill filtration in New York State.

About Holmes Cay

Holmes Cay is an independent bottling company from New York City. Founded by New Yorker rum aficionado Eric Kaye in 2019, they focus on finding the very best rums and bottling them at cask strength. Kaye used to work as a producer and music composer for film, TV, and commercials, but has also been an avid diver for decades. His favorite pastime brought him into contact with fantastic rare Caribbean rums. He felt he needed to share these with his fellow Americans, which is how Holmes Cay came to be.

Passionately standing behind the tradition and honor that is an integral part of rum, Kaye hopes to bring incredible as-of-yet-unknown unadulterated cask-strength rums to the US, introducing spirit-lovers to the best-kept secrets of the rum world. Their very first release ― Holmes Cay Barbados 2005 ― fittingly came from the legendary Foursquare Distillery in Barbados.

About Rum

Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor.

We distinguish between 4 different Rum categories, where white or unaged rum is mainly used in cocktails, while dark, spiced, and añejo (aged) rum are mostly enjoyed neat.

Tasting Notes

The nose opens with ripe tropical fruit aromas. The palate is rich and equally tropical with banana, mango, and dark sugar notes. The finish is long, rich, and balanced with lingering oak and tobacco.
