About Hiro Junmai Daiginjo Sake
The Niigata prefecture of Japan is famous for its pure mountain water ― a crucial ingredient for quality sake. Produced among golden rice fields, near the Murakami river, Hiro Sake bridges the gap between tradition and modernity. Crafted at the Taiyo Shuzo Brewery, this ultra-premium expression is made with specially polished rice from the Murakami plain in the Niigata region. After the rice is polished, it is soaked and fermented ― first with the addition of koji fungus, then with sake yeast (shubo). Finally, the sake is filtered and pasteurized twice, and bottled at 30 proof. The ultra-premium sake is suited for drinking chilled, taking in the cantaloupe, banana, and fruit notes, and its unparalleled elegance.
