About Ben Nevis 1992 21 Year Old Single Malt Scotch Whisky (Signatory Bottling)

Situated at the foot of the Ben Nevis Mountain in the Highlands region of Scotland, Ben Nevis Distillery was founded in 1825 by "Long John" McDonald, a six-foot four-inch descendent of the King of Argyll. "There are some who would have you believe that there exists a kind of divine secret," said McDonald in 1827, of producing Scotch whisky. "I however, acknowledge no miracle other than that which is worked when science and nature combine."

Ben Nevis Single Malt Scotch Whisky is made exclusively from malted barley, which is milled and mashed before being fermented with a brewer's yeast. "This has the texture of dough or putty and is vital to the process of fermentation," said McDonald over a century ago of the brewer's yeast. Today, the distillery is one of only a handful that continues to use the special yeast as it is believed to provide whisky with more texture and character as compared to distiller's yeast. Following fermentation, the wash is twice distilled through Ben Nevis' copper-pot stills.

Ben Nevis 1992 Single Malt Scotch Whisky (Signatory Bottling) was distilled on July 3, 1992 and matured for 7,747 days in a cask that was previously used to mature sherry (Cask Number 2313). Following maturation, the whisky was bottled on September 18, 2013.

The whisky has a golden copper along, along with an aroma of apricots, cherries, malt and honey. The aroma gives way to notes of red fruits (particularly plums and berries), sherry and grapes, which are complemented by subtle touches of cinnamon, cloves and caramel. The finish is complex and sweet, with notes of dark fruits mingled with notes of baking spices.
