Crafted in small batches amidst the towering majesty of the Sierra Nevada wilderness, this Calaveras Cask Straight Bourbon Whiskey presents the very embodiment of the unique region it calls home. The team at the distillery uses pure mountain water that flows just beyond their doorstep and collaborates with neighbors to procure local ingredients and barrels. First, they age the selection of intriguing bourbons in traditional new charred American oak. Then, in a nod to the area's robust wine region, they let the batches rest in those locally-sourced wine casks. The result is a stunning deep honey color with a hint of burgundy, a nose of marzipan and candied cherry with subtle cinnamon toast, and a flavor profile bursting with baking spices, ripe peach, and dark chocolate. And the rich mouthfeel gives way to deep red wine notes on the finish. And because every batch has its special quirks, collecting them presents a truly enjoyable exploration of flavors.
