Paul Mathew is a conservation biologist with a very special bond with nature. His work has left him with a keen sense of observation that he successfully harnessed when he switched professions. As a bar owner, he learned how to listen to his customers, choosing the right flavors for each mood. His experience as a bartender made him an expert in some of the finest spirits in the world, but there was always one question without an easy answer, and that question pertained to non-alcoholic drinks. He set out to create a non-alcoholic aperitif, turning to nature for his recipe. After a year of experimentation, Everleaf was born in 2017. Everleaf Marine is a refreshingly crisp spirit that takes its inspiration from the sea. Designed for gin lovers, it's crafted with a blend of 16 sustainably sourced botanicals that invoke the Mediterranean sea with umami, zesty, and tropical notes: bergamot, sea buckthorn, dulse seaweed, kelp seaweed, olive leaf, juniper, elderflower, labdanum, orris root, green tea, eucalyptus, pine, Roman wormwood, thyme, orange blossom, and fennel.
