Woodnose Sacre is the first ever non-alcoholic spirit that is made of maple. It was created by Justin and Roger, a husband-and-husband duo who are running a maple farm in Northern Vermont. On 4000+ acres of land, Justin and Roger are producing premium organic maple. They are using no pesticides or fertilizers, and their farm is 100% solar-powered and certified to be bird-friendly. This place is one with nature, and you can taste that. Clearly inspired by the pure flavor and texture of organic maple, they decided to transform it into a finer drink, more suitable for late afternoons and soft nights than for early mornings. Sacré is made by first fermenting the organic maple with vinegar in bourbon barrels. The aged, fermented maple is then blended with some fresh maple syrup and artisanal coffee, sourced from a family-owned business. This is a lush non-alcoholic spirit with bold flavors, bitter enough to add it to your negroni and intense enough to drink it straight up with some ice. On the nose, Sacré is very coffee-forward with some pleasant maple undertones. The mouthful is foamy if the drink is mixed, rich, and intense, with notes of coffee, dark chocolate, bourbon barreled maple, and herbs. The finish is soft and a bit acidic with notes of cider vinegar.
