About The Producer Mezcal Tepeztate (200mL)

The Producer's main goal is to craft versatile mezcal that would appeal to a wide range of spirits lovers. The name was chosen as an homage to all those who create and inspire, invoking passion and quality. It is the embodiment of patience, commitment, and refinement, with minimalist bottles and labels akin to those one would find in Oaxaca, Mexico ― the birthplace of the famous spirit.

"The project started as a bridge of connections between U.S. and Mexican cultures, with the goal to open the door for those curious about mezcal, wanting to learn about the individual agaves, palenques (distilleries), producers and role mezcal plays within the culture of Oaxaca," says Carlos Sada, Head of Operations. Each expression is a showcase of the mastery of its Maestro Mezcalero as well as the terroir.

It's the rich yet humble history of the spirit that The Producer draws from. This means that traditional methods are employed, including donkey-drawn stone mills, earth ovens, and copper pot stills. The agaves are selected by hand to be harvested by the palenqueros, removing the leaves to expose the piña (heart) of the plant. The hearts are then quartered and cooked for up to 3 days in earthen pits, covered with large leaves, rocks, and soil. The cooked piñas are then crushed and the fermentation process begins. After up to 2 weeks, the liquid is distilled.

The marmorata (tepeztate) agaves grow in the wild, taking a whopping 16 years to fully mature. Once they are harvested from Sierra Sur, Oaxaca, they are brought to the palenque in Santiago Matatlan, where Maestro Mezcalero Celestino Sernas turns them into delicious mezcal. Crushed with a stone tahona, the agave juice takes 13 days to ferment before it is distilled using a copper pot still. Bottled at 80.4 proof, the mezcal has citrus, jalapeño, smoke, white pepper, and mineral notes.

It can be made from different types of agave in different parts of Mexico, but most of it (60%) comes from the state of Oaxaca. Mezcal offers a large diversity of flavor profiles and ranges between 40 and 55% ABV.
