It is said that Japanese sake is made like beer, yet it drinks like wine. It can be served either chilled or warm, and it goes well with a number of dishes. Hiro Sake is crafted in the Niigata prefecture, among golden rice fields, near the Murakami river. Hiro Sake bridges the gap between tradition and modern drinking culture. For the Hiro Junmai Sake Red, they looked to the past for inspiration, finding it in the ancient recipe of Hiroemon Takeda, a renowned samurai and sake connoisseur. The sake is produced using high-grade rice kernels that are polished, leaving the core exposed. Then it is soaked and steamed in preparation for fermentation. First, koji fungus is added to the mixture to help with fermentation, then sake yeast (shubo) completes the process of transforming sugars into alcohol. Then, the liquid is filtered, pasteurized twice, and bottled. Hiro Junmai Sake Red is crafted with specially polished rice from the Murakami plain in the Niigata prefecture.
