The Distillerie du Peyrat has been distilling top-notch Cognacs for generations, but their family roots as distillers in the Charentes region stretch back to 1705. Today, they produce exclusively organic Cognacs crafted with respect for the environment and an unwavering dedication to terroir expression. Nestled in a charming riverside village just a stone's throw from Cognac, the distillery employs a unique "fatty" distillation process that involves a larger share of tails to the heart, resulting in remarkably round and flavorful spirits. Using only traditional Charentais copper pot stills and wines sourced from their estate and partner vineyards, du Peyrat's Cognacs are free of synthetic chemicals and crafted with an eye toward preserving local biodiversity. Their Organic Selection boasts a rich and sweet mouthfeel, with hints of stone fruit, white tea, and fresh flowers. About Cognac

Cognac is a type of brandy produced in the Cognac region of France.
Because the French take it very seriously, there are numerous rules cognac makers have to follow not to fall “short” into the brandy category.

The white wine from the specific grapes (Ugni blanc) has to be doubly distilled in a copper pot still before being aged for at least two years in oak casks from which the wood can only come from two specific forests in France (Limousin or Tronçais).

Depending on the age, there are three types of cognac, the youngest V.S. (Very Special), V.S.O.P. (Very Superior Old Pale), and the X.O. (Extra Old)
