About Castle & Key Restoration Kentucky Straight Rye Whiskey

Castle & Key Restoration straight rye whiskey is blended using a series of pods, each pod being created by grouping barrels to create a sensory profile. Castle & Key’s main mission is to focus on finding the best expression of the barrels rather than forcing a consistent flavor profile. Each batch, therefore, highlights different flavor profiles. Restoration Rye Whiskey has a mashbill of 17% yellow corn, 63% rye, and 20% malted barley and has been aged for 3 and a half years before being bottled at 105 proof. Each batch consists of 80 barrels at maximum. This is a perfectly balanced Whiskey that has a very impressive flavor profile for a Whiskey that we consider a youngster. It has a fantastic nose with hints of Turkish delight, a creamy malty palate, and a pleasant medium-length finish. Overall, this is a great Whiskey, best enjoyed straight up or in an Old Fashioned.

About Rye

As American as the bald eagle, rye whiskey was first brewed in the American Northeast in the 1600s. Even George Washington distilled it after leaving the Oval Office, so there’s no way of denying its origin.
It’s distinguished from bourbon for its original and unique spicy notes.


By law, rye whiskey must be made from at least 51% rye grain, aged in new and charred oak barrels for at least two years, and bottled at no more than 62,5% ABV.

This golden amber spirit has an amazingly complex nose, full of notes of Turkish delight, anise, raw grain, and malt. On the palate, you can taste caramel, discrete spice rye, lavender, mint, and lots of malt. The finish is medium-length and pleasant.
