About Callisto Rum

Callisto California Dry Botanical Rum is a pioneer in botanical rums, introducing a new generation of spirits. A fresh interpretation of a traditional Caribbean spirit, it’s infused with locally sourced Californian botanicals, capturing the essence of Californian nature. A blend of charcoal-filtered aged rums from Trinidad and Nicaragua, it’s then infused with Californian flowers, seeds, herbs, and roots. There are no artificial flavors or sweeteners. Greeting with floral aromas, the smooth palate offers a pine and floral base with a dry and crisp finish. This is truly a rum like no other.

Callisto Rum was founded by Giles after he left his native Bermuda for the Bay. Committed to the mission of bringing his passion for rum to Californians, he reinvented a centuries old spirit for the modern Californian palette. After a year of infusing rum blends with Californian botanicals – and even setting the kitchen on fire, twice – the perfect recipe was finally ready. Today, Callisto Rum captures the quintessential Californian spirit and blends it with centuries-old traditions. Callisto Rum is produced in Petaluma, California, by award-winning master distillers.

About Rum

Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor.

We distinguish between 4 different Rum categories, where white or unaged rum is mainly used in cocktails, while dark, spiced, and añejo (aged) rum are mostly enjoyed neat.

Tasting Notes
