About Rooster Rojo Smoked Pineapple Tequila Añejo
Jalisco, Mexico is known as the cradle of the famous Mexican spirit. There, in the shadow of the Tequila volcano, in the town of Tequila, lies a distillery. Fabrica de Tequilas Finos set up shop in 2000, converting a beautiful old colonial building that has stood there since 1923. It's at this distillery that a very special tequila recipe found its home. Master Distiller Arturo Fuentes Cortes had spent his life perfecting it, finally settling on the distillery and brand for his concoction to go public. This is how Rooster Rojo came to be. The rooster is a symbol of Mexico, and the king of roosters seemed like the perfect fit for the perfect tequila.
There is no proper tequila without the finest agaves. Rooster Rojo is crafted with 100% blue Weber agaves from the Los Altos Highlands. After the piñas are harvested, they are cooked in autoclaves for 10 hours. The distillery's proprietary yeast is added to the juice, starting the 72-hour fermentation. Then the liquid is double-distilled in stainless steel pot stills, designed to preserve the flavors and aromas of the agave. After distillation, the tequila is cut to proof with water that has been filtered through Mexican silver ― an industry-first ― resulting in a smoother and softer profile.
Each batch is meticulously blended to ensure consistency and the aging takes place in an environment with controlled humidity. The Rooster Rojo Tequila Añejo spends at least 12 months in 200-liter used American oak casks that used to hold bourbon. Rooster Rojo Smoked Pineapple starts with their añejo. The oldest of their 3 tequila expression then gets infused with cooked, smoked red Spanish pineapples. The first of its kind in the Rooster Rojo portfolio, the expression was crafted by Master Distiller Arturo Fuentes, who spent more than a year experimenting with various pineapples and roast levels in order to achieve the perfect balance of smoke and tropical fruit notes.
