About PaQuí Silvera Tequila

In Aztec, PaQuí stands for "being happy". The brand was founded by John Chappell, who "felt there had to be a better tasting Tequila – one that fully expresses the beautiful aromas and flavors of the blue agave fruit, without the harsh bite that is so common in Tequila." To create this smoother and softer tequila with little to no burn, Chappell teamed up with Gilberto Jasso ― a well-regarded master distiller he found in Jalisco, Mexico.

PaQuí tequila is hand-crafted using pot stills in a small distillery using a proprietary process. It starts with 100% blue Weber agave from the Jalisco highlands. Only fully ripened agaves are used, with the sugar level measured to be 25-26 brix. This means that the agaves are more than 7 years old at the time of harvest ― considerably more than your average tequila. The agaves are steamed in a stainless steel autoclave, releasing their complex flavors and aromas. They are fermented in stainless steel tanks, where fresh wine yeast is used instead of the airborne yeast that is more common in tequila production. This ensures consistency and minimizes any off-flavors. During the distillation, the heart of the distillate is separated, removing the impurities that would introduce harshness and bitterness.

The unique process results in a fruity, floral, and complex tequila that is silky-smooth with no harshness. PaQuí Silvera is the unaged expression in their lineup. Lively and subtly spicy, it's a soft and smooth spirit with flavors gently lingering on the finish. It's bottled at 80 proof and features a bottle design that was inspired by Aztec pyramids.
