In 2012, Avión was crowned 'World's Best Tasting Tequila' and 'World's Best White Spirit' at the San Francisco World Spirits Competition; one of the most prestigious competitions in the world. Over 1400 spirit brands entered competition and Avión was ranked #1 against all tequillas, vodkas, gins and white rums.

The vision was simple. Create the world's best tasting tequila. Tequila Avión Founder, Ken Austin, a long time tequila aficionado and entrepreneur, wanted to share his passion for tequila with the world. Thus, he set out to create a tequila that would embody the rich flavor of highlands roasted agave, a flavor that once you taste it, you will never forget it. Ken believed the world should understand that tequila can truly be delicious.

The journey to create Avión led Austin throughout Mexico and Jalisco to find the most coveted rich highlands agave. This is where came upon small town of Jesus Maria and the Lopez family, a fifth generation agave grower. Together they spent years blending traditional tequila making the techniques with a philosophy of never cutting corners and pushed the current methodologies to create a tequila that surprises the palate and pays homage to the highlands rich, rosted agave.

This picturesque town is located at the highest point in the Los Altos region of Jalisco, Mexico has a long, rich heritage in tequila production. It is considered the most desirable region for tequila production due to the climate, rich soil and high elevation.

At 7,000 feet above sea level in the highest elevations of Jalisco, Mexico, the nutrient rich soil and large temperature swings create a characteristically crisp and naturally sweet Agave. Like nowhere else, these conditions forge the finest start for the finest tequila.

HARVESTING

HARVESTING

The estate grown Avión Agave each take 7-10 years to reach maturity. Only the ripest Avión Agave are hand-picked and hand-harvested by jimadores in the traditional method.

After harvesting, Avión Agave is slow roasted in brick ovens for 3 days. The low temperatures perfectly caramelize the Agave, intensifying the natural sweetness of the plant.

DISTILLATION

DISTILLATION

Following fermentation, distillation occurs in traditional pot stills. The Master Distiller carefully removes the 'heads' and 'tails' of the distillate - or first and last batches to come off the still - a true art in spirits production.

This process is continuously repeated to ensure a smooth and pleasant finished product. This is why it takes 25 - 30 % more Agave to make each bottle of Avión.

After distillation, the tequila 'juice' undergoes a proprietary ultra-slow filtration system, taking up to 10x longer than other tequilas. This process removes all traces particulate and the alcoholic overtones (or 'tequila burn') that traditional tequila is known for. The result is an exceptionally smooth finished product.
