This apple brandy is double distilled using a copper pot still. During the 2nd distillation, paw paw, persimmon, and black walnut are added, along with a Maryland country ham that is suspended in the still above the pot. This makes for a smoky, savory, and fruity spirit.

They distill their Pechuga Apple Brandy once a year, paying tribute to Mexican pechugas while taking advantage of and showcasing the unique terroir of Maryland. Asimina Pumila starts the same way as Fumus Pumila, their mezcal-style apple brandy that is fermented in open wooden vats on smoked apple pomace. After fermentation, the liquid is double-distilled using a copper pot still. What makes the spirit special, is the addition of local flavors in the form of paw paw, persimmon, and black walnut during the second distillation. The pechuga part means that some sort of meat is involved ― a Maryland cured country ham is suspended in the still above the pot, giving the finished product some additional savory notes.

The nose opens with savory, herbal, and gentle smoky notes. It's sweet on the palate with fresh apple, cooked orchard fruit, anise, and mint, culminating in a long and smoky finish with a gentle warmth.
