Whipnose Whiskey (Caskers Exclusive Barrel)

Started by two college friends, Tim Obert and Clint Potter, who — several years after their graduation — were reunited by their love for craft brewing, Seven Still Distillery is an ambitious project that aims to create a unique whiskey for each of the famous “Seven Hills” in San Francisco. Taking a novel approach, Obert and Potter distill their whiskies from bottle-ready craft beers, resulting in flavors that truly demonstrate the quality of the ingredients and production, from start-to-finish.

"Not a lot of people know the connection between brewing and distilling," Obert says. "When you're making whiskey you're basically starting with a really low-quality beer. And we want to play off of that connection with our brand, using different beer styles as the basis for our whiskeys."

Whipnose Whiskey is the first in Seven Stills’ “Collaboration Series”, in which the distillery uses beers from local craft breweries to create one-of-a-kind whiskies. For this first release, Seven Stills partnered with Pacific Brewing Laboratory in the Mission District of San Francisco, using a double IPA from Pac Brew as the base for Whipnose Whiskey. The IPA is pot-distilled along with some maple sugar, then rested in new, five-gallon American Oak barrels for six months before bottling.

As a result, Whipnose Whiskey has a bright amber color and a pleasantly hoppy and floral aroma. The palate opens up to notes of wildflower, along with sweeter hints of citrus and maple syrup. The finish is at once bold and subtle, with big notes of vanilla spice and maple mingled with softer flavors of eucalyptus.
