About Château d'Yquem 1997 Sauternes

In December of 1593, Jacques de Sauvage exchanged lands that he owned with the French monarchy for a small estate in the Bordeaux region of France that would become known Château d'Yquem. In 1711, the estate became fully owned by Léon de Sauvage d'Yquem, who began using the property as a vineyard. Château d'Yquem's gentle hills and soils of gravel, limestone and clay, along with its maritime climate (the estate is situated on the south bank of the river Garron), make it ideal for producing intense grapes that can result in long lasting, sweet wines.

Château d'Yquem 1997 Sauternes was produced by harvesting grapes over the course of nearly two months. After the grapes were harvested and pressed using a process called cryoextraction, they were fermented in oak barrels. Following fermentation, the wine was allowed to mature for 42 months in 100% new oak.

As a result, the wine has an aroma of honeycombs, orange jam, vanilla and lemon rind. Notes of sweet oranges, citrus oils and candied oranges dominate the lush palate, which has a full body and medium plus acidity. The finish is long and slightly sweet, with a touch of orange marmalade.
