About Tanteo Cocoa Tequila

Produced and bottled in small batches, Tanteo Cocoa Tequila embodies the traditional craftsmanship that comes from five generations of distilling experience.

In the rich, volcanic soil of the Jalisco, Mexico lowlands, agave plants are ripened for eight years before expert jimadors hand-select the plants containing the highest sugar content. Once harvested, the plants are stripped of their leaves using a special knife called a coa de jima and the hearts of the agave, or the piñas, are shipped to the distillery. At the distillery, a fifth-generation master distiller bakes the piñas in hornos, mud adobe-built ovens traditionally used by Native Americans. The baked piñas are then shredded and their pulp is fermented before being distilled in stainless steel tanks.

Inspired by the traditional mole sauces used in Mexican cuisine, Tanteo Cocoa Tequila is made by infusing Tanteo Tequila with roasted cocoa beans and the essence of fresh jalapeños. The light, medium and dark roasted cocoa beans are grown in Guadalajara, and, after being malted, are shipped directly to the distillery, where they are ground by hand and mixed with the tequila in special maceration tanks. After the tequila is infused with the cocoa flavor, the essence of fresh jalapeños is added in order to balance perfectly the semisweet cocoa with a hint of savory spice. The tequila is then filtered through a multi-stage filtration process, which removes any remaining pulp and leaves behind Tanteo Cocoa Tequila. Each batch of Tanteo Cocoa Tequila is then inspected for quality, and each bottle is filled, wax-sealed and numbered by hand.
