Made by one of the last remaining family-owned Champagne houses, this Champagne undergoes a process known as double debourbage, which preserves freshness and flavor.

Situated in the Vallée de la Marne in northeastern France, the town of Mareuil-sur-Aÿ boasts a population of just 1,300, all of whom have a deep affinity and connection to the region. Since the 19th century, seven generations of Billecarts have made Mareuil-sur-Aÿ their home under the aegis of the village’s patron saint, Saint-Hilaire.

Established in 1818, Billecart Salmon was founded by Nicolas Francois Billecart (just after he married Elisabeth Salmon) and remains one of the few remaining Champagne houses still owned by the family of its founder. Today, three generations of Billecarts — Jean, Antoine and Francois — remain at the helm of the Billecart-Salmon House and its 50-hectacre domain.Billecart-Salmon Brut Rosé Champagne is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine.While many producers shy away from the use of Pinot Meunier since its flavors are often lost during production, House Billecart embraces Meunier through its use of double debourbage (or clarification). After pressing the grapes, the juice — or must — is chilled for two to three days, in order to allow any remaining solids to drop to the bottom of the tank. In addition to clarifying and cleaning the wine, this process also reduces the need for additional sulfates, thereby preserving freshness and flavor.

Billecart uses its own cultured yeasts (sourced from a nearby village) and ferments the grapes at a temperature much colder than most. The House uses a process known as malolactic fermentation, whereby the malic acids naturally present in grapes are converted to softer lactic acids in order to produce a more approachable and less abrasive Champagne.

Billecart-Salmon Brut Rosé Champagne has an aroma of red fruits and citrus zest that gives way to notes of light raspberries, apples and buttery brioche, the latter of which is a product of the malolactic fermentation.
