Originally established in 1823 by Irish immigrant Robert Wilson, Highspire Rye Whiskey was one of America’s most well-known brands prior to Prohibition. Wilson crafted his whiskey using 100% rye grains, combining those grains with pure water from the artesian wells of Highspire, Pennsylvania. Known for its pure quality, in those days Highspire was actually prescribed by physicians to cure various ailments. Although the Highspire brand was ultimately a casualty of Prohibition, causing it to disappear from the market for nearly 100 years, winemaker Austin Hope has recently taken it upon himself to revive the brand and create a pure, 100% rye whiskey worthy of the Highspire name. “The exciting part about what we’re doing with Highspire is that we’re really bringing back the first American rye that was ever produced,” says Hope. Highspire Pure Rye Whiskey is made from 100% specialty rye grains grown on the historic Waldeck Farm in Crestwood, Kentucky, which is only a few hundred yards from the distillery, Kindred Distilled Spirits. Once the grains have been milled, mashed and distilled, the resulting spirit is aged in California wine barrels, which balances the fresh, plump rye character with notes of fruit and spice from the wine, as well as vanilla, caramel and oak from the staves themselves.
