"Our whiskeys are sourced from other distilleries, brought back to our facility to be aged and blended in order to create new and unique flavor profiles," says Jake Chevedden, the co-founder of Mosswood Distillers. Together with his friend Therese Agnew, Chevedden founded Mosswood in 2013. "We focus on small batch releases of whiskey where we can contribute unique flavors through atypical cask finishes."

Mosswood Apple Brandy Barrel Aged American Whiskey is made from a sourced seven year old American whiskey from Tennessee. When the barrels of whiskey arrive at Mosswood Distillery (the distillery is situated on San Francisco's Treasure Island), Chevedden inspects them and then double-barrels, or finishes, the bourbon in used California Apple Brandy Barrels from Germain Robin. These barrels were previously used to mature an apple brandy distilled in upstate California, and complement the bourbon's notes of oak, vanilla and caramel with hints of fresh citrus and tart apples. Once the bourbon has been finished, it is brought to proof and bottled by hand.

Mosswood Espresso Barrel Aged American Whiskey is also crafted from a sourced, seven year old American whiskey that was distilled in Tennessee. Once the bourbon had matured, it was finished in a barrel seasoned with Four Barrel Coffee's Espresso Roast. As a result, the bourbon has notes of milk chocolate, roasted nuts, red fruits and coffee. The finish is subtle yet bold, with hints of coffee balanced against a sweet undertone. Much like the Apple Brandy Finish, this bourbon is also brought to proof and bottled by hand.
