After several years of working as a sales representative for a spirits company, Jeff Kessinger decided to branch out on his own and produce his own spirits. Kessinger was inspired by his wife's family recipe for coffee liqueur, but when he learned that the brew's backbone was instant coffee, he knew he could do better.

"We start by collecting coffee samples from various high-end Bay area coffee roasters," says Kessinger. Then, a small sample of the liqueur is made with each type of coffee. "We do a blind tasting to select which origin and roast works best and will be used for our next batch. The chosen coffee roaster and origin is hand stamped on the side of the Firelit label."

Firelit Coffee Liqueur Batch #6 is made using Guatemalan Chuito beans from Four Barrel Coffee Co. in San Francisco. Founded in 2008 and headquartered in the Mission District, Four Barrel Coffee is the brainchild of Jeremy Tooker. Tooker, who previously helped start Ritual Coffee Roasters, is known for his impeccable roasting of seasonal single-farm-origin beans.

"It's lighter,"Tooker says, when describing his roasting style. "The thing we go for is to walk that fine line of, what we like to call, "˜undevelopment.' We showcase the coffee to show why we bought it in the first place. When you have a dark roast, you're homogenizing the nuances. But a lot of companies under roast, too. We walk that fine line where it's not grassy but not burnt. We go for sweetness, caramelizing the sugars."

Firelit Coffee Liqueur has an aroma of freshly brewed coffee and milk chocolate. "Distilling the coffee really magnifies the uniqueness of the individual beans," says Kessinger. The initial notes of chocolate, toffee and authentic coffee are bold and robust, and give way to slightly sweet hints of caramel.
