Del Maguey is the brainchild of Ron Cooper. With the help of indigenous Zapotec Mexican Indian producers from the remote villages of Oaxaca, Del Maguey uses ancient, original organic processes, and the varying micro-climates and terroir gives each expression a unique, rich, sweet and smoky character. Every product is made by individual family palenqueros (producers) in old-style villages.

Agave Type: Papalometl Region: Mixteca Alta, Oaxaca Maestro Mezcalero: Fernando Caballero Cruz Proof: 90 Proof, 45% ABV Tasting Notes: Leather, slate, hints of black olive, meatiness. A medium long finish of slightly sweet dark dried black cherries followed by earthy, savory mushroom. Details: Named in Nahuatl after the butterfly (papalotl). Scientific name: agave Cupreata and looks like a giant Tobala. Distillation takes place in a stainless pot with a clay condensor and Carrizo (Mexican bamboo) tube.
