Started by two college friends, Tim Obert and Clint Potter, who — several years after their graduation — were reunited by their love for craft brewing, Seven Still Distillery is an ambitious project that aims to create a unique whiskey for each of the famous “Seven Hills” in San Francisco. Taking a novel approach, Obert and Potter distill their whiskies from bottle-ready craft beers, resulting in flavors that truly demonstrate the quality of the ingredients and production, from start-to-finish.

"Not a lot of people know the connection between brewing and distilling," Obert says. "When you're making whiskey you're basically starting with a really low-quality beer. And we want to play off of that connection with our brand, using different beer styles as the basis for our whiskeys."

Chocosmoke Whiskey, the first in the Seven Hills series, is dedicated to the Twin Peaks in San Francisco. The whiskey is distilled from a chocolate oatmeal stout that was brewed at E. J. Phair in San Francisco's East Bay and later combined with 20% peat-smoked malt. Aged for six months, Chochosmoke Whiskey has an intense chocolate aroma, with more subdued notes of smoke and malted barley. The palate is filled with warm oatmeal, honey and gingerbread, and leads to bold finish with rich, salted caramel, more light smoke and seaweed.

Fluxuate Whiskey is the second whiskey in the Seven Hills series, and pays homage to San Francisco’s Rincon Hill. This unique whiskey, of which only 59 cases were released in California, is distilled from a coffee porter made with Flux Cold Brewed Coffee, a very popular brand in of coffee brewed in Berkeley, California. As a result, the whiskey has a robust coffee aroma, followed by vanilla beans, dark chocolate and light citrus flavors on the palate. The finish is malty and sweet, with the silky coffee flavors shining through.

Each of these whiskies has been released in extremely limited quantities, and showcases the incredible way that craft brewing can ultimately play with a whiskey’s flavor. Pick up a bottle of each today!
